chipotle peppers in adobo (canned; finely diced - about 2 tablespoons)

adobo sauce (optional - if you want some serious spice)
Directions: 
  1. In a large skillet, heat oil over medium-high heat. Add onions and garlic; season with salt and pepper. Cook, stirring frequently, until onions have softened, about 5 minutes.
  2. Add ground beef to skillet. Cook, breaking up meat with a wooden spoon, until it is no longer pink, 6 to 8 minutes.
  3. Stir in the spices, and cook until fragrant.
  4. Add in the tomatoes, pumpkin, black beans, corn and chipotle peppers (and adobo sauce if you like it spicy). Stir until well-combined. Adjust the heat to low, and allow to simmer for about 20 minutes (until heated through).
  5. Taste chili and add more salt, pumpkin or heat as needed.
  6. Serve immediately with desired toppings (we love sour cream, shredded cheese, and tortilla chips).

NOTE: The pumpkin flavor is not very strong in this recipe, which makes it perfect for moms and dads who want to sneak extra nutrition past their kids. However, if you'd like a strong pumpkin flavor, reduce the crushed tomatoes by half (14 oz instead of 28 oz), add in another 1/2 cup of pumpkin puree, and increase spices/salt as needed.
