burger buns or ciabatta rolls
Directions: 

For the burgers:

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, combine breadcrumbs, onion powder, salt and pepper.
  3. In a large bowl, combine the spice mixture with ground chicken, garlic, and worcestershire sauce. Use your hands (wash them first!) to mix the meat until well-combined, being careful not to overwork the meat.
  4. Split the meat into 12 equal portions and shape them into 12 patties. Place an indent with your thumb in half of the patties. That is where you will place the cheese. 
  5. Distribute the blue cheese evenly on top of half of the patties (making sure to stay towards the middle of the patty). Top each with another patty and press the edges together to form a seal.
  6. Brush canola oil over all 6 patties, making sure to flip each one and apply oil to both sides.
  7. Place your patties on a pre-greased grill. Close grill and allow to cook for about 6 minutes. Make sure you do not press down on the patties - they'll be dry if you do!
  8. Flip each patty, close the grill lid, and cook for another 5-6 minutes. When patties are cooked through, transfer to a plate lined with a paper towel and allow to rest.
  9. While the patties rest, toast your buns or ciabatta slices on the grill for about 1-2 minutes.

For assembly:

  1. In a small bowl, combine hot sauce and melted butter. Stir until well-combined.
  2. Place patty on bun and drizzle with hot sauce mixture.
  3. Pile on the tomato and lettuce, then top burger with the other bun half. Serve immediately.
