homemade vegan ricotta (above)

Directions: 

Vegan Ricotta:

  1. Soak the pine nuts for at least an hour in a jar or something with about an inch of water topping the nuts.
  2. Drain the nuts and stick them in a food processor.
  3. Add the lemon juice, nutritional yeast, and salt.
  4. Pulse.
  5. Slowly add 5-6 tablespoons of water as you further process the ingredients until you get a fluffy, ricotta-like consistency.

Vegan Lasagna Bites:

  1. Preheat your oven to 425 degrees F.
  2. Spray some cooking spray on a baking sheet.
  3. Place a wonton wrapper on the baking sheet.
  4. Spoon some ricotta in the middle.
  5. Add some spinach and pasta sauce, to preference.
  6. Fold up the edges to make a little diamond.
  7. Pinch the corners closed.
  8. Spray the closed wontons lightly with baking spray.
  9. Bake for 10 minutes.
